WHEREVER I have gone in the last fifteen yearsin following my calling as a teacher of cooking,earnest appeals have been made to me to plan mynext book for the especial benefit of those who havejust begun, or who are about to begin, to keep housefor two or three. The young wives want to know howto buy supplies for a small family; how to cook economicallyand well; what to do with food that is leftover from any meal; and numerous other things pertainingto their daily work. At last I have set abouttelling them. They will find that it is not necessaryto have an immense income in order to live well.Strict adherence to careful instructions will, with alittle good sense thrown in, enable a young housekeeperto accomplish wonders. She can practiseeconomy and at the same time have a table that isattractively and wholesomely spread,—something forwhich most housekeepers strive without knowing thebest way to reach the goal. Of course, not all whoivbegin to build a home are obliged to count everydollar they expend. For the benefit of those whocan start in their married life with a servant to aidthem and money enough to indulge in luxuries, somespecial information and advice are given. But, afterall, the aim has been particularly to lend a hand tothose whose incomes are moderate; to make thebook a simple one,—one that even a girl may takeinterest in studying. If it prove of value to thoseyoung women who are establishing homes for themselves,its chief mission will be accomplished.
